Peanut Butter Fudge w/Walnuts

Last night, I made peanut butter fudge for the first time ever. In fact, it was the first time ever making any kind of candy. It’s delicious. It’s got this soft powdery texture and I added walnuts for more texture and it’s OH SO DELICIOUS. It was a little disturbing how much of that stuff is actually just sugar.

 

INGREDIENTS:

  • 2 cups sugar (half brown sugar if desired)
  • 1/2 cup evaporated milk
  • 2 tablespoons light corn syrup
  • 1/4 teaspoon salt
  • 1 teaspoon vanilla
  • 1/2 cup peanut butter
  • 1/2 to 1 cup chopped pecans or walnuts, optional

PREPARATION:

Mix sugar, salt, syrup and milk in pan. Bring to boil slowly. Cook until small amount forms soft ball in cold water, about 235° on a candy thermometer. Remove from heat, add peanut butter and vanilla.

After that, they don’t really tell you. You can pretty much do whatever you want, but HURRY! It starts to solidify pretty quickly. I just plopped it onto some foil with powdered sugar and mini chocolate chips. Next time I’m going to make individual little blobs. This is by far one of the easiest things I’ve ever made. Especially since I thought it would be one of the hardest. Tell me why NO ONE told me this stuff was easy to make. I’ve got ideas for so many different types of candies now.
